How to get a perfectly cooked beef topside for Christmas. 🎄
Take your beef out of the fridge and remove from packaging at least 30 minutes before it needs to go into the oven.
Preheat your oven to 240°C/475°F/gas 9.
Place the beef onto a roasting tray and drizzle with olive oil and season well with salt & pepper.
Place the tray in the pre-heated oven, turn the heat down immediately to 200°C/400°F/gas 6 and cook for the following:
1 hour for medium-rare
1 hour 15 minutes for medium
1 hour 30 minutes for well done
When the beef is cooked to your liking, take the tray out of the oven and transfer the beef to a board and cover with foil. Allow to rest for 10 – 15 minutes.
To serve, carve your beef into thin or thick slices (whichever you prefer) and serve with English mustard or horseradish sauce.
